Baking Soda and Baking powder | Difference between Baking powder and Baking soda

Baking soda :-

  • It is made of sodium bicarbonate
  • It makes cookies spread during baking
  • It is used with acidic ingredients like lemon juice , butter milk
  • It has no drying agents 
  • When baking soda is added product must be baked immediately
  • It does not contain any acid
  • It reacts with liquid not heat
  • It leave bitter taste if not combine with acid
  • Baking soda + Acid( yogurt, buttermilk) = carbon dioxide

Baking powder :- 

  • It is made of social bicarbonate plus cream of tartar 
  • It makes cookies puff during baking
  • It is used with non acidic ingredients
  • It contains starch as drying agents 
  • Baking powder are single acting and double acting , if single acting is used the product must be baked immediately and when using double acting the product should be keep for sometime.
  • It contain two kind of acids
