Baking powder :-
- It is made of social bicarbonate plus cream of tartar
- It makes cookies puff during baking
- It is used with non acidic ingredients
- It contains starch as drying agents
- Baking powder are single acting and double acting , if single acting is used the product must be baked immediately and when using double acting the product should be keep for sometime.
- It contain two kind of acids
