FAT :-

  • Fat remains solid at room temperature
  • It is More stable
  • Fat have relatively higher melting point
  • Fat are usually derived from animal
  • It contains more proportion of Saturated Fatty acid
  • They increase cholesterol level
  • They are not suitable for deep frying
  • They are soluble in inorganic solvent and insoluble in water

OIL :-

  • Oil Remains liquid at Room temperature
  • It is less stable
  • It has lower melting point
  • Oils are derived from plants
  • They contain more proportion of unsaturated fatty acid
  • They improve cholesterol level.
  • They are suitable for deep frying.
