Food commoditiy | vegetables

Food commodities refers to the ingredients which are required to produce different varieties / diversity of food items. In other hand commodity also nourishes our body with various Nutrients like carbohydrates, proteins ,vitamin , minerals .

VEGETABLES   (LEGUMES) :- 

Vegetables are the valuable source of vitamin , proteins and carbohydrates . They are edible part of various plants. They are used and served as  salad , accompaniment, garnish .

Classification of Vegetables :-

  • Roots  :- it consists vegetables like Turnip , carrot , radish , Beetroot
  • Flower :- flower vegetables consists cauliflower and broccoli
  • Leaves :- leafy vegetables are lettuce , cabbage , spinach
  • Fruits  :- cucumber , tomato , pumpkin
  • Bulb :- it consists onion , garlic  ,shallots
  • Tuber :- potato , sweet potato 
  • Stem :- celery , asparagus , bamboo shoot
  • Mushroom :- 
  • Seeds :- Beans , peas 

Vegetables contains water content from 70 to 95 percent.

SELECTION POINTS :- 

1. The skin of root vegetables should not be wrinkled.
2. Tomatoes should not have wrinkle skin too. It should have shiny skin
3.cauliflower should be white and firm.
4. Green vegetables should be green and fresh
5. Cabbage should be compact
6. Vegetables should be fresh
