 Pasta Sauce Types


1. Carbonara sauce 


Ingredients and quantity

Olive oil.                  2 Tbsp

Garlic cloves.         4 cloves

Sliced pancetta.    200 gram

Egg yolk.                  2 nos

Cream.                     1/2 cup

Parmesan cheese.    75 gram

Eggs                            2 

Methods of Preparation :

  • Heat oil in a non - stick frying pan . Add pancetta and garlic cloves. Cook for 3/4 minutes untill pancetta is crispy. Drain it and remove garlic cloves after become brown
  • Whisk egg yolks, egg , cream and parmesan cheese in a bowl by seasoning with salt and pepper
  • Add egg mixture and pancetta mixture to pasta . Season and toss it over low heat.
  • Garnish by parmesan cheese

Chef Note: pancetta is a pork product which taste and looks alike like bacon. It is also made from prok belly and is cured. We can use bacon also as it's alternative.


Napolitana sauce 


Ingredients and quantity

Plum tomato             1 kg

Fresh oregano          1 teaspoon

Fresh basil.               2 teaspoon

Medium onion.        1 number

Garlic cloves.            2 no.

Olive oil.                    2 tbsp

Salt.                           1/2 tsp

Black pepper.          1/4 tsp

Methods of Preparation :

  • Scald the tomatoes in boiling water and remove its skin, seeds , blackspot
  • Place it in blender then , blend to smooth paste. 
  • In a pan , heat olive oil , saute the onion until translucent and add minced garlic stirring frequently for another minutes
  • Add tomato puree ,herbs , seasoning. Stir well and allow to simmer gently stirring ocassions. Add a teaspoon of olive oil to sauce and stir after cooking

Chef Note : Sauce should be nice and thick and there are many variation of Napolitane sauce. One common is Arabiata which is spicy sauce in nature.for other sauce please search with keyword.


Alfredo Sauce 


Ingredients and quantity

Butter.                    40 gram

Heavy cream.       100 gram

Garlic clove           2 ( crushed)

Parmesan cheese grated.      150 gram

Italian seasonings.                  15 gram

Salt and pepper.                        TT

Methods of Preparation :

  • Melt butter in a pan and add cream
  • Simmer for 2/3 minutes . Now , add crushed garlic ,cheese , Italian seasonings  and salt pepper
  • Whisk quickly untill cheese melts.


Bolognese Sauce  

ingredients and quantity

Olive oil.          30 gram

Butter.              20 gram

Onion.              2 fine chopped

Garlic.              2 fine chopped

Chicken minced.       500 gram

Italian seasonings.    25 gram

Tin plum tomatoes.   600 gram

Tomato puree.            50 gram

Red wine                     100 ml

Parmesan cheese.     100 ml

Method of preparation :

  • Melt butter , add olive oil
  • Add chopped onion and garlic .cook untill soft 
  • Add minced chicken and cook it 5/6 minutes till meat is brown
  • Add plum tomato tin , dried herbs , Italian seasonings , tomato puree , red wine and stir
  • Stir breaking plum tomato , bring to boil and reduce untill thick red consistency. 
  • Add parmesan cheese grated and stir.
