Cold sauce | Mayonnaise

Mayonnaise is a basic cold sauce which is used as salad dressing and as an accompaniment . It has wide variety uses , particularly in hors d' oeuvres and salads.

   Recipe of Mayonnaise :-

Ingredients.       5 litre.              1 litre
Olive oil/ oil.      5 litre.              1 litre
Egg yolks              35.                      8
French mustard.  25 gram.        10 gram
Lemon/vinegar     50 ml.             20ml

Preparation :- 

Place yolk of eggs , vinegar , French mustard seasoning well in a clean bowl and whisk well
Add oil slowly , a little at a time ,whisking continuously till all oil is incorporated
Finish the sauce by adding juice of lemon and warm water .

NOTE :- DO NOT EXPOSE MAYONNAISE TO TOO LOW TEMPERATURE , OIL SHOULD NOT BE ADDED RAPIDLY AND SHOULD BE IN PROPORTION TO EGG YOLK , USE HOT WATER WHEN NECESSARY.
